Chicken with Peanut Sauce 2 skinless boneless chicken breast halves 1/4 teaspoon ground pepper Salt, to taste 1 tablespoon butter or margarine 1/4 cup chopped red pepper 1/4 cup peanut butter 1/2 cup water 1 tablespoon lime juice 1/4 teaspoon ground coriander 1/4 teaspoon ground cumin 1 green onion 2 or 3 garlic cloves, chopped
Sprinkle chicken with salt and pepper. Brown chicken in melted butter in a skillet.
When chicken is browned, add remaining ingredients. Cook uncovered over medium heat until sauce has thickened and chicken is no longer pink, 25 to 30 minutes.
