crab meat omelette Recipe


Crab Meat Omelette
4 eggs
2 tablespoons milk
1 teaspoon salt
1/4 teaspoon pepper
Dash of Tabasco® sauce
2 tablespoons chopped scallions
2 teaspoons chopped parsley
2 tablespoons butter
1 can High Sea® Crab Meat
1 teaspoon lemon juice

Prepare a basic omelet by mixing eggs, milk, salt, pepper and Tabasco®. Cook in an omelet pan after melting 1 tablespoon butter. Sauté scallions and parsley in remaining butter until soft, being careful not to let butter brown. Add crab meat and lemon juice, mixing lightly. As eggs begin to set, lower heat, add crab meat mixture, cook until almost set. Fold and finish cooking. Garnish with parsley sprigs.

Serves 2.
