boiled custard Recipe


Boiled Custard
This is very similar to eggnog, but flavored with orange.

1 gallon sweet milk
9 eggs, separated
3 cups granulated sugar
Peel of 1 sweet navel orange, cut
    into fine shreds with a sharp knife

Mix the milk, egg yolks and sugar in a LARGE pot and bring to a rolling boil, stirring occasionally. WATCH THE POT CLOSELY so it does not boil over. As soon as it reaches a rolling boil, remove from heat and fold in the stiffly beaten egg whites and shreds of orange peel. Bring just to the boil once more. Remove from heat at once, and allow to cool to room temperature; then refrigerate in large jars or a crock.

Serve in small punch cups, from a pre-chilled punchbowl, with fruitcake or cookies.
