Sweet Potato Delight Posted by Lorraine38 at 9/30/2001 4:56 pm 3 cups cooked mashed sweet potatoes 2 eggs beaten 1 cup evaporated milk 1/2 teaspoon cinnamon 1/2 teaspoon nutmeg 1/2 teaspoon salt 1 cup sugar 1 teaspoon vanilla 1 stick oleo, melted Combine all ingredients and bake in buttered dish at 400* for 20 minutes. Topping 1 cup crushed corn flakes 1/2 cup chopped pecans 1/4 cup melted margarine 1/2 cup brown sugar Mix topping ingredients and spread on top. Bake an additional 15 minutes.
