Frozen Waldorf Salad This recipe is from the old Warwick Hotel in Philadelphia, Pennsylvania.
1/2 cup pineapple juice 1/4 cup lemon juice 3/4 cup granulated sugar 3 eggs 1 cup whipping cream 1/2 cup chopped almonds 1/2 cup chopped cherries 1 large apple, diced 1/2 cup diced celery
Mix pineapple juice, lemon juice, sugar and eggs in double boiler and cook until thick, stirring constantly.
Whip the cream and fold into cool custard mixture. Add almonds, cherries, apple and celery. Freeze in freezer tray or individual molds.
